Target Shopping Trip

Last night, I went to Target to pick up a few things since I knew that my husband is going to be out of town the week after next. That’s usually when I have to have a few quick things to make because there is no one to help around the house or watch the 2 babies.

I picked up:
32 oz unsalted roasted cashews (for chicken with cashews and snacking) – 9.99
12.5 oz butter cashews – 3.99
2 boxes granola bites – 4
2 boxes mushroom cavatappi (marked down to 1/2 off) – 4.48
1 jar yeast 4.14
parchment paper (mom has been after me to get some for her) 3.13
6 organic frozen pizzas – 27
175ct security envelopes – 4.84
2 2-liter bottles of soda – free (could have gotten one more, but these are more for father in law than us since we don’t drink soda)

Total with tax was 65.16. Total spent on grocery items was 60.02.

The good thing is that I had Target gift cards so I didn’t spend anything out of pocket. I even still have a decent balance left on the gift cards.

This morning I cut up the scapes and made a scape pesto with olive oil, lemon juice, and Parmesan cheese. This will come in handy this weekend to put on toasted french bread or over the leftover mozzarella chicken ravioli container I have from Costco.

Today I plan to try to get to ShopRite. I was planning on getting organic milk for 4.99 a gallon, but we don’t have any place to store it so I will probably get some broccoli (1.49/lb) and organic strawberries ($3/quart). Broccoli is one of the 12 least contaminated vegetables so I don’t always buy the organic version.

Week of June 10th

My weeks usually start on Thursdays because that is the day I pick up my CSA and menu plan.  The first week this month was spent on vacation so all food came out of the “vacation fund.”  Trust me, it wasn’t that exciting anyways.

The planned menu is:

-roasted honey chicken with a side of garlic beet salad over beet greens
-Asian rotisserie chicken salad
- Ginger Soy Salmon with a side of asparagus over rice (used scapes for marinating the salmon, too)
-Dijon Salmon over bulgur wheat with a side of sauteed spinach
-Chicken Curry with vegetables over rice
-Stir fried thinly sliced scapes, green beans (frozen, organic), and ground beef over rice

CSA:

-3 lbs asparagus
-2 bunch beets
-1 bunch spinach
-1 bunch radishes
-1 bunch scapes

Farmer’s Market (28.50)

-1 portion squash (3.50)
-1 quart local ice cream (organic, etc. etc) (7.50)
-2 pints pesticide free blueberries (2 for $5)
-1 pint organic strawberries ($4)
-1 pint pesticide free raspberries ($2.5)
-2 Dozen organic free range eggs (2 at $3/dozen = $6 — this will be less in the future because I found a place close by that charges $2 a dozen)

Meat (I already had most of this in the freezer but will factor in the costs for you) total: $33

-organic free range roasting chicken $12.50
-Wild Caught Atlantic Salmon ($7 from walmart)
-Free Range Organic Chicken thighs (2 lbs at 3.99/lb = $8)
-grass fed organic ground beef (1.33 lbs at 2.99/lb = about $4)
-block of tofu (OK, not meat but it’s protein!) ($1.50)

Walmart

-1/2 Gallon organic milk $3.50.
-1 bunch bananas  $1

Total is $66 for the week.  I will be buying some things for next “week” soon.

Welcome to Food and Financials–a blog where food and personal finances intersect.

Each week I will post my grocery list and meal plans.  At least one other time a week I will post an update on what has been going on with the meal planning.

I usually only plan dinners with leftovers being the next day’s lunch, and I keep several options around for breakfast.  During the summer, I take Thursdays off because that is when I pick up the farm share.

I hope that posting everything here will make me have accountability and allow me to decrease the times when I opt out of cooking or make a convenience meal.
